Rice Pilau Serves 4 people as primary dish or small servings for 8. Ingredients 11/2 cups Rice (White Basmati recommended) 2 small or one medium onion, sliced into ribbons 1 or 2 finely chopped garlic cloves to taste (optional) 1 cups mixed frozen Vegetables 1 ounce vegetable oil (we use Canola) 1 tablespoon Cumin seeds 2 tablespoons Garam Masala (Available at Indian grocery stores) 4 tablespoons powdered Coriander 1 teaspoon Tumeric (optional) 2 teaspoons powdered cumin (optional) 2-3 teaspoons salt 2-3 teaspoons ground black pepper Approx. 3 cups cold water Instructions Wash rice and leave to soak. Rice should not leave the water cloudy. Turn large stovetop burner to medium high. Pour oil into large pot. Add Cumin seeds, garlic and onions and allow to cook until the onions are soft (approx. 2 minutes). Add powdered ingredients and stir into a paste. If mixture smokes or starts to stick add 1/4 cup water and stir. Add frozen vegetables and 1/2 the water and stir. Add the rice and the rest of the water and turn heat to high. Place cover on pot and bring to boil. Immediately turn heat to lowest setting and let stand for 15 to 20 minutes until rice has risen and the water has mostly evaporated. Dish is now ready to serve. ??
